I don't know about you guys, but in the heat of the summer Mexican food always calls my name. Maybe it's the fresh, citrusy flavors of lime and cilantro that do it for me. Any ways, this salsa goes great with seared shrimp with cumin, garlic, and lime folded in a corn tortilla- the perfect Taco Tuesday combination. Simple and delicious! The key to this recipe? Making absolutely sure that the mango is ripe. The fruit should give beneath your fingers before cutting it open and the flesh will be a bright orangey color. I've learned from experience that unripe mango is not ideal...trust me! I hope you all love this recipe as much as I do!
1 cup of black beans
1 avocado, sliced into small cubes
1 mango, peeled and cubed
Juice of 1 lime
1/4 cup of finely chopped cilantro
1/2 cup of finely chopped sweet onion
Dash of cayenne pepper
Salt and pepper to taste
Combine all ingredients together in a medium sized bowl. Serve with tortilla chips, tacos, or any other Mexican dish! Keep refrigerated.
