If you've been following my blog, you will know that I have an obsession with smoothies, namely smoothie bowls. If you are new to the blog, it wouldn't have taken you long to figure that out! Any-who, I wanted to create an extra special treat for Valentine's Day! Valentine's Day should be less about couples and significant others and more about showing love and compassion to yourself and those around you. Whether that's family, friends. strangers... everyone should be included!
In light of that, show yourself some love and treat yourself to this decadent Heart-Beet Smoothie Bowl. Blending a coconut chia pudding into this smoothie really takes it to the next level . I was a little nervous about using beets, but I wanted that deep red color (for the holiday of course). Low and behold, I had nothing to fear because beets do not overpower the flavor whatsoever. The bananas, blueberries, and dates offer the perfect balance. I promise that this recipe is amazingly delicious, Happy Valentine's Day!
1/2 cup light coconut milk
2 TBS chia seeds
Drop of vanilla extract
Dash of cinnamon
1 1/2 sliced frozen bananas
1/2 beet (baked in the oven wrapped in tin foil until soft)
1/4 cup frozen blueberries
2 dates (soaked for about 10 minutes)
2 TBS of unsweetened baking cocoa
Water as needed
Unsweetened shredded coconut
ake the chia pudding the night before by mixing together the coconut milk, chia seeds, vanilla, and a dash of cinnamon. Store in covered container in fridge overnight. In the morning, the chia seeds will have expanded and have become slightly translucent. The mixture should be relatively thick.
Place the rest of the ingredients in the blender, including the chia pudding (set aside a little for topping your smoothie with). Blend until smooth and creamy, add water as needed to allow the blender to work properly (it's a thick one!). Poor or rather scoop in this case into a bowl. Top with unsweetened shredded coconut and the remainder of your chia pudding.
