pumpkin chocolate chip cookies

One of my favorite cookie recipes- you can't go wrong with a chocolate and pumpkin combination with a little coconut thrown in the mix. This recipe is a result of one of my first baking experiments without using a preexisting recipe  They were a big hit with the fam, even my sister loves them! I love having these cookies with a piping hot cup of apple cider or my decadently dark hot chocolate


ingredients:

1 cup brown rice flour

1/4 tsp baking soda

2 tsp  ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp ground cloves

1 TBS ground flax seed

1/2 cup unsweetened shredded coconut

1/2 cup honey

1 egg

1/2 cup pumpkin puree

1 tsp vanilla extract

1/4 cup chocolate chips

Raw pumpkin seeds and extra coconut for topping


directions:

Combine flour, baking soda, spice, flax, and coconut in a large bowl. In a separate bowl, whisk together honey, egg, pumpkin, pumpkin and vanilla. Add the wet ingredients to the dry ingredients and combine to form a thick batter. Stir in chocolate chips. Drop spoon sized cookies onto an un-greased baking sheet, sprinkle pumpkin seeds and coconut on top. Bake at 350 degrees for about 10-12 minutes. Enjoy them warm off the pan or store them in the fridge and eat them cold for a denser texture.
