zesty guacamole

I. Love. Guac. If I start eating it, it's hard for me to stop. With spring in bloom and summer looming ahead, I've been getting excited for the light and fresh citrusy flavors of the season. I don't know about you, but my favorite summer-time food is most definitely Mexican food with a generous side of guacamole to go with. The best part about guacamole is that it is so simple and easy to make and full of nothing but good-for-you ingredients! I've been whipping up my own guac without a recipe for awhile now, so I thought I'd share it with all of you. I tend to go heavy on the lime and light on the heat, especially if I am paring it with a nice and spicy salsa. I also love using finely diced onion, red in particular, to give it a nice texture and I prefer extra chunky guac. This recipe goes perfectly with any Latin or Mexican dish or as a snack with some delicious tortilla chips (Way Better Snack's are my fave). Enjoy!


  • 2 ripe avocados
  • 1/2 red onion, finely diced
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Salt & pepper to taste
  • Dash of cayenne pepper or hot sauce (optional)


Cut avocado in half and scoop into a large bowl. Mash to desired consistency with a fork, I like my guacamole more on the chunky side. Mix in remaining ingredients, adjust salt, pepper, and cayenne pepper to taste. Serve with tortilla chips, tacos, burrito bowls, and more! Cover and store in fridge.
